Program Description

University of Wisconsin-Stout students majoring in Hotel, Restaurant and Tourism Management or any major have an opportunity to gain international experience studying wine and food pairing in Spain. The course is designed to teach students the applied approach in matching wine and food from Spain and the US. Students will use flavors, textures, and components present in food and wine as complimenting strategies. There will be an emphasis on menu planning, preparation of foods, cooking methods, and tasting wines with food in a formal dining room. UW-Stout and Spanish instructors will jointly teach classes. Highlights include visiting cultural sites in Malaga and winery and vineyard tours in Mallorca. Students will have direct contact with winemakers and winemaking techniques. Other highlights of the trip include dining at Spanish restaurants, cultural site visits and hands-on cooking of food and matching with wine in a five-course meal. The group will arrive and stay in Malaga for the first three days. The remainder of the trip will be spent in Palma de Mallorca.
